Pancakes – Food Friday

Happy Friday everyone! Each Friday I share a recipe that is not just good, but good for you! This week, I’m talking about PANCAKES!

Pancakes made better

Pancakes are a comfort food. Comfort food often means high fat, high calorie, highsugar. But you can make pancakes less high all of that.  And, you can top them with less high all of that.

We like morning pancakes occasionally.  There is a favorite, easy recipe from the Better Homes and Gardens Cookbook I received at a wedding shower 46 years ago.  But we make them a little healthier by switching out flours (whole wheat for white) and sometimes, adding oats to the mix.  If we have them, we add blueberries into the mix. 

Once I realized I should be eating no gluten, I started experimenting and now, Dave and Joel say they like the gluten free variety better.  A mix of flours is fun.  

This last batch had coconut flour, almond flour, teff flour, and a gluten free blend.  

Available toppings this day were applesauce (always, always an option on pancakes!), banana, almond butter, fig butter, agave syrup, and strawberry jam. And, of course, butter.  Mix and match and personalize.

Recipe:

  • 1 ¼ cup flour (a mix…doesn’t matter which or how much of each)
  • 3 tsp baking powder
  • 1 Tbsp sugar
  • ½ tsp salt
  • 1 egg
  • 1 cup milk (or almond milk)
  • 2 Tbsp oil
    **½ tsp xanthan gum if using gluten free flours

Put all dry ingredients into a bowl and stir to mix. 

I put milk, eggs, and oil in a measuring cup and mix to beat the egg.

Add it all together until smooth and cook them up.

One bowl, one measuring cup, one fork to stir and mix.  Easy.

The best pancakes are not the first ones cooked (don’t know why). Low to medium heat keeps from burning them.  Be patient.  When they are bubbly on the top, they are ready to turn and should turn easily.  I often need to add some more milk if the batter gets too thick while waiting to be cooked.

Enjoy! No need for tons of sugary syrup or powdered sugar!  I double the recipe hope for a few left over.   We’ll grab a cold one later for a quick snack…plain or with peanut butter or a slice of cheese…yummy when melted slightly!
