Easy Egg Recipe

Have you been cooking more since staying at home? I wanted to share with you a recipe that is super easy and made with ingredients that are easy to get! You can also check out other recipes from previous Food Friday posts!

EGG BITES

Ingredients:

  • 8 eggs (will make 24 small bites or 12 muffin sized bites)
  • Spinach
  • Feta (I’ve also used Trader Joe’s Unexpected cheddar cheese. Today, I had leftover carrot noodles with goat cheese with the fresh spinach. These were especially good!)

Instructions:

  1. Put ingredients in a blender and blend. 
  2. Pour into muffin cups and bake at 325 for about 25 minutes (until firm, but not dry). 

Tips…

  • Put non-egg ingredients in first so the eggs don’t get too foamy.
  • Don’t add milk.
  • Blend just enough to mix it all together. 

As with anything I make, it is very forgiving.  Try whatever you like. Refrigerate and snack as you like. I don’t mind them cold, but you could certainly warm them in the microwave, but only for a short time (10 secs?).
