Detox Salad

It’s Friday! Time for a new recipe that is good and good for you!

One year when we were up in Chicago for a travel show with Dave’s Authentic Mexico Travel business, we stopped into Whole Foods for a take along lunch.  I got their “detox salad” and loved it.  I googled a recipe that I have used and adapted.  I take it to potlucks, make a bunch on a weekend and have it all week as a topping to spinach salad or a go-along with baked potatoes or on top of barbequed pork loin or chicken.  

Here is my adapted recipe for “Detox Salad.”  It is not a recipe to measure anything…just cut stuff into pieces that fit in the food processor, chop it all up, stir it all together.

Detox Salad

Shopping List:

  • ​Head of cauliflower ​
  • Bunch of broccoli​
  • 3 large or a handful of small carrots
  • ​Bunch of parsley (or cilantro if you like it)
  • ​2 limes
  • ​Raisins or currants or dried cranberries

Using a food processor, pulverize (chop until the size of bb’s):

      Half a head of cauliflower 

      Large head of broccoli (include stems as long as they are not tough)

      A handful of baby carrots or 3 large whole carrots

I usually dump the chopped up veggies into a large bowl as they are appropriately pulverized. The parsley is best done with the carrots…gets it all chopped up small.

Salt and pepper to taste.

Add raisins or whatever dried fruit you are using.  Stir well to mix.

Squeeze the limes and add the juice to the mixture.  Stir some more.

Simple!  Tasty!  Good and good for you!
